How much would you recommend Doctor Who?
It depends... I like it very much, but you might not. I know of some people who I think would like it, but quit after seeing a couple of episodes. Although, the first 3 or 4 episodes of New Who are kinda... dumb.
For reference, Doctor Who is split up in "Old Who", which are the old series, from the '50's to the '80's (I think), and New Who which is the current run. New Who is where I started, and is where most people started.
It's very kids friendly, and although it has some terrifying episodes, it never goes very dark. It's pretty Sci-Fi, but with plenty of history mixed in too.
I'd say just try and start with watching the first episodes, but the first episodes are not representative of the rest of the show. The best episodes in the first season are episode 9 & 10 ("The Empty Child" & "The Doctor Dances"), which is a better representation of Doctor Who. They are, coincidentally, also the creepiest episodes in the first season.

So I should start watching http://www.imdb.com/title/tt0562992/?ref_=ttep_ep1 and wrestle myself through the entire season before making a decision? I'm fine with that, a lot of series require you to watch a few episodes before you start to love them.

That's where I started.
But like I said, the first few episodes are pretty dumb. The stories make no sense, the CGI and acting is a bit off (as if they're not entirely sure what to do), and there seems almost no coherence in the episodes. But after a couple of episodes, it gets better. Episode 6 is alright, and episode 9 & 10 are great.
They also have multiple writers, which makes the episodes vary wildly in quality. Some are genius, some are just weird.
Basically, if you see "written by Steven Moffat", prepare to forgo sleep. Almost all the creepy episodes are written by Moffat.

Thanks for the heads up. I really hope I'll make it through the bad CGI, it's a real buzzkill for me.

Well, it's not so much CGI as just odd costumes. And especially in the first seasons, the suits just look fake. Trust me though, it gets a LOT better in the later seasons. Starting season 5, they got a massive upgrade in budget.
