I have never played the series, but am really interested in doing so.

Should I start at the first game? Is it necessary to start at the first one so I can "follow the story"?
If not, which assass do you recommend I start with?

The first game sets out some basic world foundations. Who is Abstergo, what is the Animus, how can you do what you do, stuff like that. Major downside is that in comparison to other AC games, the first is a bit repetitive. (steal, eavesdrop, help, kill, travel, rinse and repeat).
The real story picks up from ACII, and the Ezio trilogy (ACII, AC Brotherhood and AC Revelations) is by far the best part of the series. It was made back when Ubisoft had some sense and made a game that wasn't pure crap.
AC3 is full of new features, and new moves and a new(ish) storyline, but it's less gripping than the previous 3. IMHO it's because the main character is just less interesting.
AC4 is pretty great. You get an entirely new style of game, but still familiar enough like the old games. It can be insanely repetitive (kill a ship, use it to upgrade yours, repeat until invincible), but I had a ton of fun playing it.
I haven't gotten around to playing Unity, Rogue, or Syndicate, but my little brother claims they're great.
There is a shitload of extra canon stuff as well, tiny games and comic books which all tie into the main storyline and explain several small things, but unless you're absolutely hooked, don't bother.

I guess I'll just start with the first game then, thanks for the info.

BTW, a lot of the AC games are on sale in the Steam store, right now.
Be warned though, they require uPlay to start, and uPlay is the result of an onholy mating session between Satan and Satan's evil twin.

I might just torrent the first games and if I really like them I'll buy the on steam.
Also damn you Ubisoft!

I remember there being something off about pirated AC games... Can't remember what though.
I can seriously recommend you play them with a controller. The games are obviously made for consoles, and the gameplay is a lot more fluid with a controller than mouse/keyboard.
